Beef jerky is really easy to make at home, especially if you have a dehydrator or, if you're less hard-core, an oven. Hell, I'll teach you how right now with my SUPER TOP SECRET RECIPE.
It's all about the meat - nothing below 93% lean. Let me rephrase that - NEVER GO BELOW 93% LEAN. NEVER. So go out to your grocery store and get 93% lean or above ground beef (or, if you can find venison, BUY THAT, but just make sure theres no pork mixed in).
For every pound of beef, mix together:
1/2 cup soy sauce
1/4 cup brown sugar
2-3 teaspons minced garlic (I prefer more in mine)
3 teaspoons liquid smoke
Pour above mixture over the ground beef and mix together thoroughly. Let it sit in the refrigerator for about 45 minutes to let the meat soak the liquids. You can form the beef into strips or nuggets, and make them as thick as you wish (I prefer thinner, crispy jerky). Set the dehydrator for 160 degrees for 6.5 hours, although you should check from time to time on the progress, as it may take longer or shorter depending on the fat content of the beef.
I have read that you can use an oven (proping the door open just a little to let moisture escape). Not sure how great they will come out though.
